Roast Chicken leg quarter with Benny

Roast chicken will never go out of style.  Give your chicken leg quarters flavour with help from Benny, Mrs Balls, All Gold and Colman's.   
Ingredients
  • 2160g Chicken leg quarter, uncooked and cleaned
  • 1 Spray and Cook

Marinade:        

  • 45ml Mrs. Balls Jalapeno Chutney
  • 45ml All Gold tomato sauce
  • 45ml Colman’s Hot English mustard
  • 45ml white wine vinegar
  • 1 Benny’s chicken seasoning sachets
Method
  1. Mix all the marinade ingredients together in a large bowl.                                 
  2. Place chicken in the marinade and baste to ensure entire chicken is covered.                                 
  3. Marinade the chicken 4-6 hours or overnight in refrigerator.                                  
  4. Preheat oven to 180°C.                                
  5. Take chicken out of marinade and place in a greased baking tray.                                 
  6. Turn down the heat to 160°C and bake chicken uncovered for 1 hour or until cooked through, basting often with marinade.                                 
  7. Remove chicken from oven once cooked. (ensure clear liquid runs out once pricked)                                
  8. Garnish Chicken and serve.
