- 400 g Fresh Whole Sweet Corn, cleaned
- 45 ml Olive oil
- 5 g Paprika
- 2 g Cumin
- 45 ml Cross and Blackwell Tangy Mayonnaise
- 5 g Salt
- 10 g Fresh Garlic
Method
- Preheat the often to 220 C.
- Cut corn into quarters so that you have 4 corn ribs per ear of corn.
- Lay the corn on an oven tray with the cores facing down and the kernels facing up.
- Combine all the rest of the ingredients and mix well until the oil and Cross and Blackwell mayonnaise emulsifies.
- Cover the corn ribs in the sauce and place in the oven until the corn is crispy on the outside and cooked through approx. 20 min.
- Serve the corn ribs on a platter as a side.
