Golden Cloud Scones

Ingredients
  • 1 kg Golden Cloud Scone mix
  • 4 Eggs, large
  • 300 g Butter, cold 
  • 100 ml Milk, cold
  •   Spray and Cook to prepare the baking sheet

Serve with:

  • Whipped cream 
  • Grated cheese

Method
  1. Cut the cold butter into the dry scone mix until the mixture resembles coarse crumbs. This step is crucial for achieving the desired texture in your scones. By incorporating the butter evenly throughout the dry ingredients, you'll create pockets of flakiness and richness in the finished product. Take care not to overmix, as small butter pieces are essential for tender and light scones.
  2. In a separate bowl, combine the milk and eggs.
  3. Incorporate the wet ingredients into the dry scone mix, taking care not to overmix. Handle the mixture minimally and only until it comes together.
  4. Roll out the dough to a thickness of no thinner than 2 cm and cut out the desired shape and size. Use cutters with sharp cutting edges rather than blunt, rounded edges, as the sharp edges will allow the dough to rise properly. Blunt edges crimp the ends of the scone together preventing it from rising.  Brush the tops of the scones with milk or egg wash.
  5. Arrange the cut scones on a prepared baking sheet and bake for 10-15 minutes or until they turn golden brown.
  6. Once baked, garnish and serve the scones with All Gold jam portions and grated cheese or whipped cream.
