OROS Cupcake with Jelly Tots

Ingredients

Cupcake:     

  • 500 g Golden Cloud Cupcake mix
  • 150 g Melted Butter
  • 2 Eggs
  • 250ml Milk
  • 5ml Vanilla essence or paste

OROS reduction:

  • 250 ml OROS concentrate 

OROS Icing and topping:        

  • 150 g Butter (or Margerine)
  • 240 g  Icing sugar 
  • 30 ml OROS concentrate 
  • 1 ml Food colouring (optional)
  • 100 g Jelly Tots Craziberries
Method

Cupcakes: 

  1. Preheat oven to 180 C. Prepare cupcakes as per on pack instructions.

OROS Reduction:

  1. While cupcakes are baking, prepare the OROS reduction. 
  2. Place OROS concentrate in saucepan on low heat. 
  3. Reduce the concentrate by half of the original liquid and put aside until needed.  (This can be made in advance and refrigerated.)

Prepare Icing:

  1. Whisk butter until pale in colour by either using a hand mixer or better yet stand mixer using the whisk attachment. 
  2. For best results switch to a paddle attachment and incorporate icing sugar by adding small amounts at a time.  
  3. Beat in the OROS, if a deeper colour is desired add food colouring until the desired colour is reached.  

Assembling:

  1. Load a piping bag armed with your favourite piping tip with the OROS icing.  (Tip:  the larger the nozzle the easier it is to control the swirl)
  2. After cupcakes come out of the oven brush cupcakes with OROS reduction. 
  3. Pipe desired swirl on top of each cupcake and garnish with Jelly Tots.
