Jalapeno and cheese Ace pap poppers

Ingredients
- 180g Ace Maize Meal
- 250ml Cream
- 500ml Water
- 5g Salt
- 100g Onion, chopped
- 15ml Olive oil
- 15 Clove Garlic, crushed
- 120g Cheddar Cheese, grated
- 300g Cheddar Cheese (Cubes 1cm x 1cm cut)
- 60g Biltong Shavings
- 30ml Mrs. Ball Jalapeno chutney
- 2g Ground Nutmeg
- 60g Ace Maize Meal for breading station
- 60g Golden Cloud Cake Flour
- 3 Eggs, whisked
- 5l Sunflower Oil (For Frying)
Method
- Heat water, Cream and Salt in a medium sized pot.
- Add Maize Meal to the pot and cook for 5 minutes stirring continuously. Remove from the heat.
- Heat Olive Oil in a separate pan and brown diced Onion and crushed Garlic.
- Place the cooked maize meal in a large mixing bowl and add cheddar cheese, biltong shavings, Mrs Balls jalapeno chutney, nutmeg, browed onion and garlic . Taste test the mixture and adjust the seasoning to taste.
- Form the mixture into balls and pop a cube of cheese into each ball.
- Set up a breading station with whisked egg, flour and maize. Coat each ball in flour, egg and maize meal. Repeat the egg and maize meal step twice(double crumb coat).
- Fry until golden and crispy. Serve with a chutney dipping sauce.
